Mini Cheesecakes

This is a very tiny and cute dessert called mini cheesecakes. I used two different jam flavors (Strawberry and Raspberry) I thought that would be perfect with white chocolate, although you can use any kind of jam that you like. It looks so fancy,but inexpensive. If you want to impress your guests, this is a great way to do that. Perfect for parties. I suggest you keep them chilled, because the colder they are, the better they taste. My husband and the boys always beg me to make this for them. I must warn you, though, they are very addicting! Once you eat one, you can't stop!
Mini Cheesecakes
(About 48 mini cheesecakes)
Crust:
  • 1 cup graham cracker crumbs
  • 3 Tbsp sugar
  • 4 T melted butter
Filling:
  • 2 packages cream cheese,sofened
  • 3/4 cup sugar
  • 2 eggs
  • 1 1/2 tsp vanilla extract
Topping:
  • Strawberry and/or Raspberry seedless jam
  • Melted white chocolate to dizzle
Preheat oven to 350 degrees. Line miniature muffin tins with miniature paper liners.
Mix graham cracker crumbs, 4 Tbsp melted butter, and 3 Tbsp sugar together and fill the bottom of each paper cut pressing firmly.
In a mixing bowl, beat cream cheese,sugar,eggs,and vanilla extract until ight and fluffy. Fill each miniature muffin liner with this mixture,almost to the top.
Bake for 15 minutes. Cool. Top with strawberry and/or raspberry jam and drizzle melted white chocolate on top.

Spinach Stuffed Tilapia over Garlic and Parmesan Mashed Potatoes



Last night, my husband surprised me with this wonderful dinner. This was spinach stuffed tilapia, over garilc and parmesan mashed potatoes, and covered with a hollandaise sauce.  I would say that I am very impressed! He does many things to amaze me everyday. This was his recipe that I would like to share with y'all. Enjoy! 


 Spinach Stuffed Tilapia
Servings: 4    Total time: 25 mins
  • 1 cup fresh spinach leaves,chopped
  • 1/4 cup grated Parmesan cheese
  • 2 Tbsp grated onion
  • 1/4 Tsp Tabasco sauce
  • 1 lbs Tilapia fillets
  • 1 Tbsp butter
  • 2-3 clove garlic, minced (Depends on how much you like)
  • Smoked Paprika
  • Dried Parsley
Combine Spinach with Parmesan cheese,onion, and Tabasco sauce. Mix well.
Wash fillets and pat dry.
Divide spinach mixture among fillets and spread evenly over the surface.
Roll up and pace,seam side down, in baking pan.
Melt butter, remove from heat and stir in garlic.
Brush fish with garlic butter and sprinkle with paprika and parsley.
Bake at 350 degrees for 20 minutes or until internal temperature registers 145 degrees.

Garlic and Parmesan Mashed Potatoes
Servings: 4    Total time: 45 mins
  • 6 cloves garlic,minced (Don't be afraid of garlic, use as much to you like)
  • 1 cup whipping cream
  • 1 tsp sea salt
  • 2 lb russet potatoes,peeled and quartered
  • 1 Tbsp sea salt
  • 1 1/2 cup grated Parmesan cheese
  • 1/2 cup minced fresh parsley
  • 1/4 cup garlic butter or regular butter
  • white pepper, to taste
Melt butter in a saucepan. Add garlic and cook,over very low heat,covered about 20 minutes or until tender. Do not brown.
Add cream and 1 tsp sea salt,simer 10 minutes and keep warm.
Boil the potatoes in water and 1 Tbsp sea salt until tender. Drain well.
Whip potatoes until smooth.
Add the cream mixture,cheese,and parsley.
Stir until fluffy.

One Hollandise package
Follow the direction on the back of package.

Serve Stuffed Tilapia over the mashed potatoes and cover with Hollandise sauce.
